Irene Herrera is a passionate coffee producer, growing coffee of Bourbon, Marshell and Caturra varieties on the loamy clay soils of her La Mandarina farm, Finca La Mandarina is located in Gramalotal community in La Coipa, San Ignacio, Cajamarca at an altitude of 1750 to 2000 meters above sea level.
Irene picks only the ripest of cherries, with peak months being June to August. Her coffee is washed processed, involving selective harvesting, depulping, fermentation in a tank of 24-36 hours, washing, and drying in solar driers for 10-15 days.
This specific lot is comprised of exclusively Marshell varietal. Marshell is a rare, high quality coffee variety discovered in the Cajamarca region in 2016. Believed to be a natural mutation of the Bourbon veriety, Marshell is known for being highly resilient to diseases and offering an exotic, complex and sweet flavour profile.
