This coffee is produced by Domingo Lopez at his 8 hectares of land surrounding his Finca El Pajal.
Domingo has been working hard to preserve pure Arabica varietals, such as Caturra, Catuai, Bourbon and Pache, in the area where the use of hybrids like Catimore is on the rise. Domingo's approach and preference are based on the superior cupping quality of pure Arabica varieties, which are much harder to cultivate. Domingo's farm uses most advanced organic coffee growing practices, with coffee plants growing in the shade of other carefully selected food crops and full care taken to ensure that the coffee trees are nurtured and protected without the use of synthetic fertilisers and pesticides.
