Over the past several years we have been sourcing some of the most delicious coffees from the Cajamarca region of northern Peru. This year, we are incredibly delighted to be offering this delicious microlot from Wilson Centurion.
Wilson Centurion is a passionate producer, who is totally committed to the quality of his coffee that he grows on his small farm in the San Ignacio municipality of northern Peru. The farm has sandy, loamy soil and a tropical climate. During harvest, only the ripest of cherries are selected for processing. They cherries depulped on the same day and subsequently fermented without water for an average period of fifteen hours and then fully washed three times with clean spring water. For drying, coffee is moved to raised beds inside a covered dryer. After eight to fifteen days that take to fully dry the coffee, Wilson places his coffee into bags for temporary storage in a cool dark room on his farm before driving his harvest to Lima Coffee, his producers' association, for milling and exporting.
